Ever since Henrik appeared on the Copenhagen food scene in the '90s, pulling margaritas from a plastic bucket and serving them with a soup ladle to the city's celebrities and cultural figures, he has been a world champion at creating the framework for unforgettable events.
“I come from the French kitchen and have gone through various kitchens and spices to then gather it all into a very, very simplified version. Go to the market, shop, buy what comes to mind, and what's available that day. And then home and improvise in the kitchen.”
Henrik's approach to food is about selecting raw materials from the farm-to-table principle.
“If you cook with the right ingredients, you do the climate and other people a service,” he says. “The taste experience should of course be top-notch, but it doesn't have to be so stiff and snobbish. The atmosphere is just as important.”
Henrik also loves to share, and you are always welcome to watch over his shoulder when he's in a kitchen. “I like to share my knowledge. I've always been told that when people have been standing and chatting, it has changed their way of seeing food. Because it's so simple, so straightforward in its form, that it's easy to understand.”

Vi havde fornøjelsen af at have Henrik til at lave middag hos os, og det var en uforglemmelig oplevelse. Menuen var omhyggeligt sammensat og hver ret var en stor oplevelse. Henriks dygtighed og sans for detaljer var tydelig! Samtidig var Henrik en kæmpe fornøjelse at have i sit hjem, og han gjorde oplevelsen personlig og mindeværdig. Vi kan varmt anbefale Henrik til enhver, der ønsker at løfte deres middagsselskab til nye højder.

Vi havde givet Henrik frie hænder til at sammensætte menuen, og resultatet overgik absolut vores forventninger. Vi fik syv serveringer og alle retter var en sand eksplosion af smag. Varm anbefaling herfra!
