For me, it's important that we protect the good ingredients, which is why I never compromise.
Based on the Danish and Nordic seasons, my goal is always to use the best ingredients I can get my hands on, and as far as possible organic. From leeks to turbot, I always strive to ensure that the ingredients are of the highest possible quality.
Behind Tablespoon Cph (tablespooncph.dk) is Nicolas Stampe, who has been self-employed for 13 years in the restaurant industry, with great success in the last year.
I graduated from Søllerød Kro and have experience from several of the best places in Copenhagen including AOC, at Fischer, Winterspring Desserts and most recently as head chef at Kafeteria at the National Gallery of Denmark
