I am a young, happy and energetic chef of 28 years old who has been ambitious from the start, I have started at a michelin restaurant and have also been in bistro, classic French and Danish restaurants. I know Nordic cuisine and am well versed in the classic French kitchen techniques.
I am committed to good ingredients and believe that the ingredients speak for themselves. I do not compromise on quality and take pride in respecting what I work with.
I love to collect herbs and things from the Danish nature, and often my menus will be characterized by things from the Danish nature, mixed with the best vegetables, meat and fish.
Most important of all is the guest and your experience, the food should fit the occasion, you should feel in good hands and get an experience out of the ordinary every time.
I'm opening my own restaurant this summer, so this is just to provide good experiences and use the time wisely until then.
