About the chef

I graduated in January 2014 from Kokkedal Slot CPH after which I worked as a chef or sous chef at various places in Zealand. Including Marienlyst beach hotel, Schæffergaarden, Rønnede inn, and SUKAIBA.

In addition, I have been a private chef for the royal family on Dannebrog and Chef de partie at **Michelin Restaurant Jordnær and **Michelin restaurant KOKS POP UP.

I love to deliver an experience beyond the ordinary, and my passion for food, service, finesse, and good taste will always shine through when you book me. I love to challenge myself and I will gladly tailor a menu that fits specifically for you.

If you choose that I will be in charge of your event, it is also my company "Dining by Willemoes".
This means that in addition to the menu, I can also offer to manage wine pairing, rental of service, and the possibility of providing a waiter or sommelier.

Fantastic food and chef. Everything was under control and the evening ran smoothly without me having to worry about anything. Good communication and clarification of all questions - and fantastic at accommodating special needs. All in all, a fabulous experience. THANKS 🙏

We had booked Niklas for a golden wedding dinner. The food was fantastically tasty with a lot of surprising flavors with lovely wines and juices. All five dishes were excellent and he and the waiter were incredibly pleasant company. On the day, I found out that we were not 15, as booked, but 16. Without flinching, Niklas stepped in and conjured up an extra place setting. The same when we were a little late, Niklas was just as accommodating. He gave us a totally fantastic evening and left the kitchen spotless. Thank you very much for that.

Nicklas helped make my birthday dinner a truly special evening. He spent a long time on the phone with me to find the right menu. He arrived in good time on the day, and everything went as it should. He effortlessly adapted serving the food to the evening's events. He came to the table and presented the food. Very polite and nice. Afterwards, you could hardly tell he had been there - everything was cleaned up, and leftovers and trash were taken with him. My guests definitely thought it was a special experience and praised the food. Especially the carpaccio was fantastic.
