Foreword
This winter menu is rooted in Nordic seasonality, using organic produce, fermentation and preserved wild ingredients to create depth and balance during the colder months. The dishes are shaped by techniques such as curing, pickling and drying, capturing the flavors of the forest, coastline and fields at their peak.
