Foreword
This 8-course winter tasting menu is designed as a journey through the Nordic winter. It begins with light, precise courses built around preserved vegetables and fermented elements, gradually moving into deeper, warmer flavors using cured and wild ingredients preserved at their peak.
The menu finishes clean and balanced, bringing the story full circle. Fermentation and preservation guide the experience throughout, creating a seasonal and immersive fine dining dinner in your home.
