Foreword
This new menu is has been done consciously in regards of ecology and care of our food resources. I try to work with only organic products to provide the best results. Menu might change depending of available products. This menu is both Vegetarian and it becomes Vegan as I take out any animal product and replace them with non animal products.

Tarasca soup: slow cooked beans, ancho chilli, veg bouillon, crispy tortilla strips, queso fresco, creme fraiche.

Quesadilla: Corn torilla, queso Oaxaca. zucchini flower, green salsa tatemada.

Tacos with saute sweet potatoes: chilli cream salsa, sliced avocado, toasted peanuts, crispy leeks, fresh coriander.

Mole Verde: Green mole sauce, Grilled cauliflower, fried platain, rice.

Meringue: fresh sweet corn cream with mascarpone cheese, burned corn husk.
