Foreword
El Patron would like to bring the unwritten and unknown Mexican cuisine to you, we focus on the very basic and delicious food from organic corn tortillas, chocolate/chili sauces, fresh vegetables and organic and free-range meats that melt in the mouth.
The vision of our food is to offer what no one else can do, some modern recipes and some recipes dating back to the 16th century as our mole poblano sauce that goes back at least 200 years of tradition and the new kitchen era that has evolved into something special with influence from Turkey, Lebanon, Greece, France and Spain.
Besides this, I have lived and worked in Paris, France. I always love french cuisine and therefore we are also introducing our french menus. Working in some bistros and making the most basic, earthy, not luxurious traditional food and getting inspiration from chefs like Yves Camdeborde, this Frenchy experience can't get any better.
