About the menu
Denne menu udspringer fra min store erfaring og rejse igennem det Japanske og dets traditionsrige køkken. Menuen er sammensat som en rejse, der tager dig dybt ind i den japanske følelse og efterlader dine smagsløg imponerede og undersøgende. Jeg kommer selv ud, tilbereder og laver menuen samt fortæller om retterne. Ved bestillinger op til 20 personer, medbringer jeg originalt japansk
service.

Dashi blancheret spinat serveret med frisk krabbe.
Main course
Edomae nigiri sushi med laks, tun og inside-out maki ruller.
Main course
Seared beef sashimi with wasabifoam, ponzu & sesamdressing.
Lynstegt oksekød sashimi med wasabiskum, ponzu & sesamdressing.

Tempura kammusling i Kaitaifi (arabisk filodej) serveret med friske japanske spirer, spicy chilimayo & soja æggeskum.

Agurke/champagne granité med lime og saké.

Jens Rahbek har et CV og en en gastronomisk karriere, der er længere og mere imponerende end de flestes. I 1980erne var han i lære som japansk kok i Tokyo, i 1989 startede han sin første restaurant Nanbantei of Tokyo i København, i 1994 var han medstifter af den kendte restaurantkæde og store succes Sticks’n’sushi, i 2010 stod han bag gourmetrestauranten Ebisu i Custom House, og senest har han kastet sig over det japanske street food koncept Yatai by Jens Rahbek. Igennem hele sin lange karriere har fællesnævneren altid været kærligheden til det japanske køkken og forståelsen for de råvarer, der bliver brugt i køkkenet. Det er den viden og passion, Jens tager med sig ind i dit køkken til en private dining oplevelse udover det sædvanlige.

When you send a request to a chef, you create a profile at the same time, so you will be notified when the chef has sent a response to the request. You will get access to a message thread, where you can write to the chef at any time and make further arrangements.
You can choose to start from one of the chefs' menus or have a menu tailored just for your taste buds.
Are you more into fish than meat? Or do you prefer cake to ice cream for dessert? Send a request to the chef and share your wishes so that you can put together a menu that suits you and your party. The chef also has the option of creating alternative menus based on allergies and children's menus.
You will be able to see further up the page what the chef's requirements are for your kitchen, as well as what the chef is able to bring. If you are in doubt, you can ask the chef after you have sent a request.
The chef is responsible for both shopping, cooking, serving and cleaning up the kitchen. Therefore, you just have to be responsible for setting the table, drinks (unless you have an additional wine menu or similar) and enjoy the time with your guests around the table.
