For me, Christmas is equal parts tradition and renewal. This menu reflects that, taking inspiration from the flavors associated with Christmas, but in new attire. The menu reflects the season's local ingredients - especially those we've grown in our own kitchen garden here at La Finca. 5 courses of total indulgence for those who appreciate great taste and quality ingredients with respect for the farm-to-table principle and good craftsmanship.

Baked hake with braised leek and mirabelles from La Finca, crispy seeds and sauce with Aged Knas & thyme
Forret
Grilled Danish squid with tomatoes - lightly baked and as broth - from the vegetable garden and tarragon oil
Buffet
'Tartar' on grilled beetroot with browned butter-mayo, crispy pearl barley, pickled salad onions & cress
Main course
Long-braised pork belly from Birthesminde with pickled garlic and Brussels sprouts. Served with a sauce of caramelized onion and garden plums
Dessert
Poor knights with tonka & vanilla cream, pickled cherries and crispy rice

My name is Jens Söndergaard, half Swedish, half Danish, and wholeheartedly a gastronome with almost 30 years of experience as a chef, where I have worked as a head chef in everything from Michelin restaurants to Meyers canteens. However, it has never been stars that have driven me but the love for flavor, cut to the bone, and the simplicity of good ingredients. Being able to pass this on, served on a plate to happy guests, is an experience every time.
Privately, my wife and our two children recently bought a small country estate with 1 hectare of land, overlooking Lammefjorden, a newly established organic kitchen garden, and the dream of eventually running, among other things, a pop-up restaurant, cooking school, and catering. Sustainability, animal welfare, and the farm-to-table philosophy are part of my cooking, just as I would love to include our own ingredients, but also other local products of high quality, in the food for you and your guests.

Hvad skal jeg selv stå for, når jeg booker en kok?
Kokken står får både indkøb, madlavning, servering og oprydning i køkkenet. Derfor skal du blot stå for at dække bord, drikkevarer (medmindre du har tilkøb vinmenu eller lign.) og nyde tiden med dine gæster om bordet.

Jens cooked for 24 people at my round birthday and it was absolutely fantastic. Jens is super professional, calm, and friendly. Everything was perfect from the start in terms of making the agreement, finding a good menu, punctuality, and the entire process in the evening. Guests unsolicitedly praised the food, which was both delicious, flavorful, and beautifully presented. I can truly recommend Jens as a chef, and I am sure I will use his culinary skills again.

We had the pleasure of having Jens as our chef yesterday, and it was a fantastic experience. The food was incredibly delicious, with perfectly balanced flavors and beautifully presented. Jens was both professional and approachable, and he had everything under control, which made the whole experience even better. It was clear that he is passionate about his craft, and it really showed in every single dish.

We had booked Jens for my mother's 80th birthday with 40 guests. Everything ran smoothly. For many of the guests, it was a somewhat different dining experience - in a good way - with lots of greens, many delicious flavors, and beautiful presentations. Jens' manner is wonderfully calm and competent - the quality is top-notch, and you're in good, knowledgeable hands.
